Sweet and Spicy Tomato Jam

2-3 lb Tomatoes
3 tsp Cinnamon
1 1/2 inches of Ginger
3 tbsp Sugar in the Raw*
1/2 tsp Red Pepper Flakes
Juice of ½ lemon
Pinch of salt

  1. Chop the tomatoes and throw them into a sauce pan (make sure you get the juices!).
  2. Grate the ginger into the saucepan.
  3. Add the remaining ingredients and stir
  4. Cook on medium heat until the liquid is mostly evaporated, the tomatoes are concentrated, and it looks like a jam. This will take about an hour or more.
  5. Store in a jar.

*Use any sugar you want!
